It’s something many restaurant operators learn belatedly in the United States and Canada: just any tandoori oven will not necessarily pass inspection when used in a commercial kitchen. In the case of gas-fired tandoori ovens, they are NSF/ANSI 4 in the US and CSA Z83.11 in Canada.

NSF/ANSI 4 is the standard for commercial cooking equipment used in a food preparation environment. It includes knowledge of materials, construction, and cleanability, which are core aspects of the health inspectors’ criteria. The Canadian Standards Association (CSA) has a standard for gas appliances used in commercial kitchens (CSA Z83.11), and in most Canadian provinces, it is mandatory that a gas appliance be pre-installed to comply with the standard before it can be installed at all.

The CH04: What a Mid-Size Restaurant Kitchen ACTUALLY Needs
