EGG AND BEAN TACOS
Servings: 4 • Prep time: 15 minutes • Cook time: about 8 minutes
Ingredients
- 1 onion, thinly sliced
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 500 ml (2 cups) cooked and drained white beans
- 90 ml (6 tbsp) olive oil
- 2 garlic cloves, chopped
- 4 eggs
- 15 ml (1 tbsp) Tex-Mex spice mix
- 4 soft or hard wheat tortillas
- 250 ml (1 cup) shredded cheddar cheese
- 2 lettuce leaves, cut into thin strips
- 2 Quebec eggs, hard-boiled
- Salt and pepper to taste
Herb Sauce (Persillade)
- 75 ml (5 tbsp) chopped parsley leaves
- 60 ml (4 tbsp) chopped basil leaves
- 60 ml (4 tbsp) olive oil
- Salt and pepper to taste
Preparation
STEP 1
In a hot skillet, sauté the onion, peppers, and beans in a little oil for 5 minutes.
STEP 2
Add the garlic and adjust seasoning.
STEP 3
In another hot pan with a bit of oil or butter, crack the eggs and scramble them roughly.
STEP 4
Turn off the heat, add the Tex-Mex spices, and cook for 1 more minute until you reach your preferred texture. Set aside.
STEP 5
For the herb sauce: in a bowl, mix the parsley, basil, olive oil, salt, and pepper.
STEP 6
Add the prepared herb sauce to the sautéed vegetables and toss to combine.
STEP 7
In each tortilla, layer the vegetable mixture, scrambled eggs, cheese, lettuce, and finally grate the hard-boiled eggs on top.
